MOLLIE Aspen is a new, 68-room boutique hotel that occupies a prime location on Paepcke Park in the heart of Aspen, Colorado. The hotel’s name honors the town’s most successful silver mine, Mollie Gibson, which originated in the late 19th century and served as a catalyst for the town's early economic, social, and cultural progress. Drawing inspiration from the many individuals that shaped Aspen throughout its history, MOLLIE Aspen embodies the spirit of their restless enthusiasm for the outdoors, ability to bring people together and passion for art, design and freedom of expression.
This past winter season, the St. Regis Aspen introduced a fully renovated mountainside manor that encapsulates a modern alpine aesthetic and compliments the building’s original Victorian architecture as well as the destination. Delectable Dining
The re-designed and re-concepted West End Social at Aspen Meadows Resort features 270-degree views of Aspen’s mountains and an approachable menu, designed by Chef de Cuisine Rachel Saxton, which highlights shareable plates that encourage conversation. There is both an openness and warmth to the redesign which plays off the stunning scenery of Aspen’s ski mountains. With an unobstructed, stunning view, the large outdoor deck is a perfect place for après drinks and dining. And, to appeal to all types of dining experiences, the same menu will be served in the dining room, at the bar, and outdoors. Seasonal, live entertainment will also be a staple on the expansive patio.
