We are highlighting the incredible efforts of the Aspen businesses participating in the Colorado Green Business Network. This program is designed to support and recognize businesses that are committed to sustainable practices. Through this series, we'll showcase how these businesses are making a difference in our community through their impactful initiatives. Below, PARC Aspen discusses their experience with the Colorado Green Business Network of Aspen and continued dedication to sustainability.

 

Colorado Green Business Network of Aspen: PARC Aspen

PARC Aspen is a locally owned fine-dining restaurant deeply rooted in the Aspen community. Founded by a couple who have called Aspen home for nearly 10 years, our mission is to provide a sustainable, elevated dining experience that is as welcoming to locals as it is to visitors. We are proud to have been featured in numerous reputable publications including Rolling Stone, The Infatuation, Wine Spectator, Aspen Magazine, Aspen Sojourner and more. Over the years, we’ve been honored with accolades such as Best Restaurant and Best Fine Dining Restaurant, as well as individual awards for Best Bartender, Best Sommelier, from Aspen Times and winning the annual Mactoberfest Competition. Beyond these achievements, we strive to be an active part of the community—supporting local farms, attending farmer’s markets, and participating in mental health awareness events.

How has the Colorado Green Business Network been helpful to you?

The Colorado Green Business Network has been instrumental in helping us reach and exceed our sustainability goals. Through the program, we’ve been connected with valuable resources, including compostable bins and bags provided by the City of Aspen. Having a local contact through the City has made it easier for us to implement and maintain eco-friendly practices. It has also increased our team’s awareness and education around the importance of sustainability and proper waste management, empowering us to take even more meaningful action.

Sustainability Initiatives Highlights

We are proud to integrate sustainability into every level of our operations. Key initiatives include:

  1. Team-focused sustainability efforts: We provide e-bikes and bus passes for team members to reduce commuting emissions. In addition, we make significant efforts to house team members within Aspen city limits to lower travel impact and foster a stronger local workforce.

  2. Responsible sourcing: We partner with Farm Runners and other sustainable farms, using Green Circle Chicken, Creative King Salmon, Colorado Hybrid Bass, and even fryer oil sourced from Healthy Harvest, a Colorado company dedicated to sustainable practices.

  3. Food waste reduction: We provide family meals and encourage team members to bring their own containers to take home surplus food, ensuring nothing goes to waste.

  4. Eco-friendly operations: We’ve invested in Energy Star-rated kitchen equipment to minimize energy consumption while maintaining high culinary standards.

  5. Community engagement: We volunteer with Highwater Farms and host a for-profit dinner to directly support their work in sustainable agriculture.

Joining the Colorado Green Business Network gives businesses the knowledge, tools, and confidence to make impactful changes. It creates a sense of shared responsibility and pride in contributing to a more sustainable future. The program fosters collaboration and makes sustainable practices more accessible and achievable—no matter the size of the business.

Sustainable business practices are a vital way to protect the city and its surrounding ecosystems. Small, intentional efforts—like reducing food waste, sourcing responsibly, and minimizing energy use—add up to a significant collective impact. By taking action and speaking openly about sustainability, we help build awareness that extends beyond our restaurant, inspiring others in Aspen and beyond to create lasting change.
