Aspen Over Easy: Located conveniently below the brewery (brunch downstairs, happy hour following upstairs), Aspen Over Easy is known as a local’s favorite for breakfast and more importantly, brunch. The restaurant serves up the typically All-American breakfast with a giant menu full of choices such as omelettes, waffles, pancakes, breakfast sandwiches and more.
Hickory House: Think massive portions, LOTS of meat and a wide-open space to stretch your legs (and belly) all afternoon long. Treat yourself to their Texas sized omelettes, steak and eggs, or the classic baby back ribs and eggs. Yes, there are vegetarian friendly options too, but non-carnivores have much more to choose from at Spring Café.
HOPS Culture: HOPS is more than just a place with over 200 domestic and imported craft beers. The restaurant also serves up upscale American comfort food that will please any empty stomach (or a stomach turning full of Escobar’s potato vodka ordered a whim to impress the tourists next to you the night before). In addition to the menu full of favorites such as specialty mac n’ cheeses, gourmet salads and hearty soups, HOPS offers a Carnitas special (gluten free!) every Saturday and chicken and waffles every Sunday. Justice Snow’s: Hair of the dog? Check. Fresh, locally sourced ingredients with creative dishes? Check. Head to Justice Snow’s on any given Saturday or Sunday and you will see the place packed with hungry locals and altitude-sorry tourists alike. Justice Snow’s is the only places in town that offers bottomless mimosas AND a build your own bloody mar bar. For the ultimate hangover dish opt for the Huevos Rancheros, one of Chef Leichliter’s specialties. The dish is made with both red and green chilies (aka Christmas) smothered over a perfectly cooked plate of huevos, with a side of quite possibly the best breakfast potatoes you’ll ever have.

Poppycock’s: Funny name, serious breakfast. Open since 1971, Poppycock’s is one of the few places in town where you can grab breakfast all day. Top recommendation: the famous oatmeal buttermilk pancakes (pancake mix available to order online).
