New Aspen Restaurant, Bosq to open early June 2016

 

Aspen's newest restaurant serving New World Cuisine will be open end of Spring.

Aspen, Colorado - May 10, 2016 - Chef C. Barclay Dodge, along with his partner, Theresa Chase, are set to open Bosq, which is a form of Bosque, meaning Forest, early June 2016.  The name was chosen because Dodge really wanted the restaurant to, "Feel like where we were." His worldly experiences—from studying cooking techniques and cuisines in San Francisco to Morocco and many places in between—will heavily inspire the menu.

Chef Dodge, former owner of Aspen's restaurant Mogador, as well as the executive chef at Pacifica, has been in the restaurant world for the past twenty-five years and is excited to bring his food back to Aspen.  Dodge grew up in Aspen and has a deep passion and interest in bringing his studies and flavors to the well-traveled, international clientele that Aspen possesses.  His dishes will be fresh, seasonal, and ever changing.  He wanted to create a menu that could be altered to fit the season.  "It is really important to me that we keep things fresh in the sense that people will want to come back multiple times a week or month and see what is new.  We will always have certain dishes which I’ve perfected and am excited to share, like our Peking duck and oxtail dumplings to name a few." Chef states.

Bosq will be open for lunch and dinner in the Summer and dinner only for the Fall, Winter and Spring seasons.  The patio will serve forty diners and the inside will serve thirty-nine including a nine seat bar.  Bosq will have a full service bar and an affordable and approachable wine list to be sure to please all and magnums of rosé will be served all summer long.
