Aspen Snowmass Introduces Village Tasting Room, a Winter ‘Pop-up’ Restaurant in Snowmass Base Village

Opening Dec. 7

ASPEN SNOWMASS, Colo. – Dec. 1, 2020 – Debuting in Snowmass Base Village as a new ‘pop-up’ restaurant, Aspen Snowmass introduces Village Tasting Room, open Dec. 7 from 10 a.m. to 6 p.m. daily this winter season only. The new eatery will have the look and feel of a European brasserie and offer shared plates and comfort food that pair perfectly with a glass of wine. Taking over the old State 38 space, the large patio offers prime outdoor seating and easy access to the slopes just steps from the bottom of the Village Express Lift and Fanny Hill.

 

“When executive Chef Helsley and I were presented with the opportunity to come up with the concept and menu, we sat down and just started to list foods that we enjoy eating,” says Jim Butchart, culinary director for Aspen Snowmass on-mountain dining. “We did not want to restrain ourselves or stick to a traditional format. Instead, the menu pulls from many regions and traditions and is a collection of delicious dishes that we feel our guests will very much enjoy.”

 

The new menu includes a sharable charcuterie board with saucisson sec, chorizo and speck served with pickles, mustard and crostini or a cheese board that offers a daily selection of three different cheeses. Dishes then move into the grilled sourdough flatbread with broccolini and ricotta with or without anchovies, and the Colorado grilled lamb meatballs with burrata and a simple tomato sauce. Pair dishes with a light or decadent wine chosen by the in-house master sommelier or a cold beer. A small selection of canned craft cocktails will be available as will Lavazza coffee and espresso.

 

Village Tasting Room will also offer to-go wine selected to a guest’s liking by the master sommelier as well as food items such as the charcuterie and cheese boards, select appetizers and Elk Camp rotisserie chicken and local grass fed meatloaf dinners.

 

The new restaurant concept offers a fresh option for a relaxing ski lunch or hor d'oeuvres with family and friends at the base of Snowmass. Prices range from $15 to $30 for dishes. Walk-in only. No reservations.
